Atlanta Trip June 2012

We recently took a trip to ATL to visit my extended family. We always have a great time catching up, playing games, and my dad's side are amazing cooks and hosts so we are really able to relax and enjoy ourselves.  Below are some pictures of the little guy meeting his Great Grandpa and Grandma Bradbury and his Great, Great (yes, 2) Grandma Saft (102).

Apple Crunch Dip

This is a delicious treat and super fast and easy. A fun recipe for the kids to help with!

1 bag of crushed toffee (Heath bar)
1pkg cream cheese
1/2 cup sugar
1/4 cup brown sugar
1tsp vanilla
4-5 large apples, cut into slices.

Put softened cream cheese in a medium mixing bowl and stir in remaining ingradients. Serve with apple slices.

Hair Bow

Today I realized after being at the office for a few hours and in a few meetings I had a little something "extra" in the accessories department-one of Harleigh's pink polka dot hair clips. As we were getting her ready this morning, we were "accessorising" and she wanted mom to have some "boootiful" accessories and put a hair clip in my hair (to compliment the barrette I already had in). With breakfast, lunch, getting work stuff packed up I completely forgot until I used the restroom at work around lunch time. Nothing says "professional career woman" like two hair accessories one of which is a pink hair clip! Harleigh 1 Mommy 0!

Big Sister Quotes

The terribly two's are sometimes, well, terrible! However, they're also fun because kids really absorb so much at this stage and start to put pieces together in their communication skills. Harleigh loves, loves, loves being a big sister and being around babies. I'm not sure who she gets this from! The first thing she does when she wakes up or comes home from school is run right to Lawson. She gives him squeezes (often too tight) and nonstop kisses. Although we have to keep a watchful eye on her as she can sometimes try to 'take him out of his car seat' or 'swing him' (into the sky - and sometimes her face, because she hasn't grasp the "cause and effect" concept) we would rather her enjoy his company than not care. Harleigh talks to Lawson as though he understands what she is saying. Here are a few quotes she's been saying lately-

"Lawsy no pull my hair" (typically H is bent over L's head and he's got a solid grip on a handful of hair)
"Go to sleep and no wake up your friends" (I think she's picked this one up from school. Her teachers have often said that H is the last one to sleep and the first one up from naptime. We've had quite a few reports home with "No Nap" written on the schedule. I'm guessing she probably hears this a lot.)
"I no like that" (usually pertaining to food)
"ohhhh....beauuuutiful, mama" (after she paints my hands nails, she will compliment her work)
"It's okay, Harleigh here" (Anytime Lawsy or Brooksie is sad, H will go over and comfort them)
"Pew, Lawsy. Lawsy pee-oop" (I guess this is a combination of a pee and poop in Lawson's diaper? In other words, L needs a change)

Gnocchi with Tomatoes, Pancetta & Wilted Watercress

As I mentioned in a previous post, my sister and I have started making "double" the recipe and swapping dinners. It allows for us to try new things and not have to cook as often! I've really enjoyed this new routine. And if you know my sister, she is Food Network's biggest fan, and is a fabulous chef!

This recipe is a new one I tried and I plan to make again. I'm one for quick and easy recipes and this one fit the bill. Both Zak, and Ginger enjoyed it also!


  • 2 ounces pancetta, chopped (you could also substitute bacon here)
  • 3 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1/2 teaspoon sugar
  • 1/4 teaspoon crushed red pepper
  • 2 teaspoons red-wine vinegar
  • 1/4 teaspoon salt
  • 1 pound gnocchi, 
  • 4 ounces watercress, tough stems removed, coarsely chopped (6 cups packed)
  • 1/3 cup freshly grated Parmesan cheese

  • Preparation

    1. Put a large pan of water on to boil.
    2. Cook pancetta in a large nonstick skillet over medium heat, stirring occasionally, until it begins to brown, 4 to 5 minutes. Add garlic and cook, stirring, for 30 seconds. Add tomatoes, sugar and crushed red pepper and cook, stirring, until the tomatoes are almost completely broken down, about 5 minutes. Stir in vinegar and salt. Remove from the heat.
    3. Cook gnocchi in the boiling water until they float, 3 to 5 minutes or according to package directions. Place watercress in a colander and drain the gnocchi over the watercress, wilting it slightly. Add the gnocchi and watercress to the sauce in the pan; toss to combine. Serve immediately, with Parmesan.
